Virtual brand

A virtual brand is a delivery-only menu concept run out of an existing restaurant's kitchen, sold under a different name purely to reach more customers online.

Also called a virtual restaurant, it is a separate brand that exists only on delivery apps and your own online ordering, cooked in a kitchen you already run. A burger spot with slack capacity might launch a wings brand off the same line, the same staff, and the same equipment, to capture searches the burger name would never surface for. Unlike a Ghost kitchen, there is usually a real, dine-in restaurant behind it: the virtual brand is an added digital storefront, not the whole business.

The appeal is squeezing more revenue out of a kitchen and a lease you are already paying for, and testing a concept without opening a second location. With off-premises now ~75% of restaurant traffic, a second menu tuned to what delivery customers actually search for can fill slow hours. Design it with Menu engineering discipline: build the virtual menu from ingredients you already stock so it does not blow up your food cost or overload prep.

The catch is the same margin trap as any delivery play. If the virtual brand lives inside Third-party delivery, you surrender close to a third of every order (30%-40% of revenue), so the operators who make it work use the apps for discovery and then pull repeat customers onto First-party ordering where they keep the data and the margin. A virtual brand that only ever sells through the marketplaces rents its demand forever. See online ordering.
