Average check
Average check is total sales divided by the number of guests (or the number of tickets), showing how much a typical customer spends per visit.
Average check is total sales divided by the number of guests served, sometimes called per-person average (PPA), or divided by number of tickets for a per-order view. It is the lever that lets you grow revenue without adding a single new customer or a single new seat: raise what each existing guest spends and the whole business gets easier at your 3-5% net margin. Track it by daypart and by server, because the averages hide where the money actually is.
There are only two honest ways to move it: sell more items per visit (an appetizer, a second round, dessert) or shift the mix toward higher-value items, which is the work of Menu engineering and Upselling. The catch is consistency. A great server upsells naturally; a tired or new one forgets, and the check average sags on exactly the shifts you can least afford it. That inconsistency is the real leak, not a lack of willingness to spend.
AI helps by making the suggestion happen every time. On the ordering side, voice and digital ordering systems prompt the add-on on every ticket without pressure or fatigue: drive-thru voice AI makes roughly 4x more context-specific upsell attempts than staff and has driven up to +6% revenue. On the analysis side, menu tools show which pairings and price points actually lift the check so you promote the right ones. See online ordering and menu optimization.
