RevPASH (revenue per available seat hour)

RevPASH (revenue per available seat hour) is total revenue divided by the number of seats multiplied by the hours open, measuring how productively every seat earns.

RevPASH, revenue per available seat hour, is total revenue divided by (seats x hours open). It borrows from how hotels measure revenue per available room, and it is the sharpest single gauge of how hard your dining room is working, because it folds two things a restaurant usually tracks separately into one number: how fast you turn tables (Table turn time) and how much each guest spends (Average check). A packed room turning slowly at low checks and a half-full room of big spenders can post the same RevPASH, and knowing which you are tells you what to fix.

Its value is that it stops you optimizing one lever at the expense of another. Push turns harder and RevPASH only rises if the check holds; push the check with a longer, pricier menu and it only rises if the table still turns. It also exposes your real problem hours. The same seats sit idle at 3pm and jammed at 8pm, and RevPASH by daypart shows exactly where capacity is being wasted versus where demand is being turned away.

AI lifts RevPASH from both directions at once: reservation pacing and waitlist tools (OpenTable, SevenRooms) keep seats full through the shoulders and protect the turn, phone and booking agents recover covers you were losing to unanswered calls, and menu and upselling tools raise the check on the guests already sitting.
