Comps
Comps are items or checks given to a guest at no charge (complimentary), typically to fix a mistake, recover a bad experience, or extend hospitality.
A comp is anything you give away for free, short for complimentary: a remade entree that came out wrong, a round on the house to recover a slow night, a dessert for a regular's birthday. Used well, comps are one of the cheapest tools you have for turning a bad experience into a loyal guest. Used carelessly, they are a hole in the P&L that hides in plain sight, because the food still costs you money whether or not it was ever rung up as a sale.
The reason to watch comps closely is that they inflate your true Food cost percentage without showing up as sales: you bought and cooked the ingredients, but no revenue came back. A steady drip of comps by one server or on one dish is usually a signal of something fixable (a recurring kitchen error, a menu item that keeps disappointing, or theft dressed up as generosity). The number itself is not the enemy; an unexamined number is.
AI does not decide who gets a free dessert, but it makes comps legible. POS analytics (Toast, Square for Restaurants, Restaurant365) break down comps by reason, server, item, and daypart so you can see whether you are recovering guests or leaking margin, and tie the pattern back to the kitchen issue causing the remakes. Pairing that with review and guest tools also tells you whether the recovery actually worked. See inventory and food cost.
