Average unit volume (AUV)
Average unit volume (AUV) is the average annual sales generated by a single location, a headline benchmark for how a concept performs per unit.
AUV is total sales divided by the number of locations open, the average one unit rings in a year. It is the figure franchisors, investors, and operators use to size up a concept in a single number: a strong AUV means each box works, a weak one means the model is stretched no matter how many units exist. For scale, the US industry is projected at $1.5 trillion across 1 million+ outlets, but that average hides enormous spread by format and location.
For an independent, AUV is the yardstick for your own trajectory and for judging a second location before you sign. It works hand in hand with Same-store sales: AUV tells you the level, same-store sales tells you the direction. It also sets realistic expectations for Occupancy cost and Break-even point, because a rent that is comfortable at a $2M AUV is fatal at $700K.
Lifting AUV is the sum of every other play: recovering missed-call covers, filling seats with better reservation pacing, and raising Average check through menu and upsell tools all push more annual sales through the same unit. Forecasting and POS analytics make those gains visible per location. See demand forecasting and menu optimization.
